Since a young girl Nikki has always been passionate about being in her kitchen and working with food and especially baking. Her delicious recipes are very successful family recipes passed down, and this has expanded into baking for clients and creating specialty wedding cakes and keeping abreast of the new modern trends that are ongoing. In 2008 Nikki won the prestigious "Heavenly Cake" competition at the 7th Annual Bridal Fair held at Canal Walk.
Nikki loves liaising with excited brides and helping them to create their dream wedding cake. All baking, decorating, delivery and set up at the wedding venue, is done by Nikki herself. Imported chocolates, imported liquers, fragrant nuts and seasonal berries can be added to create delicious fresh flavours. Nikki says: "I am passionate about food and baking, and do not mass produce. I bake with love and passion, and really "nurture" my cakes, so they really taste delicious as well as look divine, each cake being made with love and attention to detail."
Besides wedding cakes, Nikki also makes special occasion cakes, tarts, profiteroles, individual small delights and hand made truffles.

Birthdays are special days and deserve wonderful cakes to celebrate the occasion. Nikki's specialty skills in making wedding cakes gives her great ideas in creating wonderful tasting and great looking birthday cakes, christening and special occasion cakes. You can choose to have chocolate mousse cake, vanilla mousse cake, chocolate cake with praline filling, legendary orange and chocolate cake, mocha sponge, vanilla sponge, coconut sponge, almond sponge, chocolate cake with hand made truffles, divine moist carrot cake, hummingbird cake (similar to carrot but without the carrots and using pineapple), orange, lemon, poppy seed, lemon poppy seed cake or traditional fruit cake - plenty of options to drool over and choose from !!

Nikki runs ad hoc classes for Beginners, an Entertaining course, various once off courses such as Thai, Moroccan cooking etc, how to debone and stuff a chicken, a two tier Domestics course, one-on-one classes, and lastly Children's cooking classes are run during every school holiday. Nikki also caters for small intimate functions.
Join me in a relaxed home environment and I will show you how to debunk the myths about fancy entertaining. Where else could you relax, enjoy yourself, meet new friends and learn short cuts to creative, interesting and tasty cooking ?
Each week we will focus on starters, main courses and accompaniments, ending off with delicious decadent puddings. The Back2basics Entertaining course is a fun relaxed course, Jamie Oliver style, a jam packed enjoyable morning, afternoon or evening, and then at the end of the class eating and sharing the feast that we have conjured up with your new found friends !!

As holidays approach Mom's inevitably start thinking about what to do with their youngsters during the school holidays. Nikki Green offers cooking classes for school going youngsters from 6 to about 14 years of age working from her home, based in Fish Hoek. Every holiday excited children learn some new cooking skills in the kitchen, with ardent returnees and new friends constantly being inspired. All ingredients and recipes are supplied, classes are 4 hours long and this includes their lunch which they have created themselves. What better way to spend some artistic time, in a safe environment, enjoying the delights of learning a very important life skill. Depending on the holiday some classes are theme related, such as Easter and Christmas. Some examples of what has been made in the past include chocolate coated caramel turtles, stained glass window cookies, home made sausage pie, chicken phyllo triangles, spaghetti and salad pita's, phyllo baskets filled with fresh fruit and ice cream, owl cookies and many, many other recipes.
